Hazelnut, Feta and Pomegranate Salad
Throw these ingredients in a bowl, toss and serve to get a potent antioxidant rich salad, keeping you feeling and looking younger.
1/2 pomegranate (deseed this in water as easier)
Why: Among the numerous health benefits of pomegranate, the seeds can act to keep blood platelets sticking together and forming blood clots therefore can stop the ‘bad’ (LDL) cholesterol from oxidising.
Handful of spinach
Why: Spinach is full of antioxidants including two of the carotenoids, lutein and zeaxanthin — yielding benefits to eye health.
1/2 block of feta finely chopped
Why: Feta is protein rich so will assist in keeping you fuller for longer but also is rich in calcium and B2
1/2 medium fennel bulb
Why: Fennel is an excellent source of vitamin C, a water soluble antioxidant that helps neutralise free radicals in the body.
10 crushed hazelnuts
Why: Not only does it give the salad a crunch, Hazelnuts contain phytochemicals, including proanthocyanidins, quercetin and kaempherol to support circulation and brain health.
Why: Not only rich in phytonutrients, flavonoids, and active phenolic compounds, coriander can act to detoxify heavy metals in the body.
1 tablespoon sesame seed oil
Why: Purely for taste but also had good levels of copper, magnesium and the antioxidant vitamin E.
