Flipping crazy – Pancake Day

In the kitchen we’re moving on quickly to getting everything ready for Easter – and then somebody mentioned Pancake Day which we’d all nearly forgotten about.

I love pancakes and don’t need an excuse to make up a batch for a relaxed weekend breakfast, but the tradition of making pancakes on Shrove Tuesday is one we shouldn’t forget. It’s also great fun getting the kids involved – I remember in my youth sticking as many as possible to the ceiling to the dismay of my mum!
I’m a sweet pancake fan myself, although the French way of eating them with cheese, ham and the optional addition of an egg is a delicious treat. They seem to have the art sewn up – wafer thin crepes stuffed with bananas and Nutella are another favourite.
As with all things though, the simplest is often the best and good old lemon and sugar make the most delicious combination.

A touch of Spanish romance – baked scallops with crispy Serrano ham

scallops_560.jpgLight, fresh and ready in a jiffy, this recipe is ideal for Valentine ‘s Day. Scallops are one of those ingredients that are worth taking the time over to find a good supplier – try your local fishmonger for really fresh, tasty, plump little examples. The addition of a touch of chilli is guaranteed to warm your heart!

This fantastic piece of culinary creation comes from my great friend Jose Pizzaros’ book, Seasonal Spanish Food – a must for any food lover, lover or foodie.
